DEO Guides

Can you freeze ginger? Yes — and you probably should.

Fresh ginger is one of those ingredients that always seems to shrivel in the fridge just before you need it. Freezing fixes that. Here's how to do it properly — and the shortcut we built DEO around.

The short answer

Yes — ginger freezes beautifully. Frozen whole, grated, or blended into portions, it keeps its fiery flavour and nutritional value for up to six months. Freezing is far gentler than letting ginger dry out in the fridge, and frozen ginger can be used straight from the freezer — no defrosting needed.

How to freeze ginger, step by step

01

Choose fresh, firm root

Look for plump ginger with smooth, taut skin. Wrinkled or soft root has already started drying out and won't freeze as well.

02

Wash and dry thoroughly

Rinse the root and pat it completely dry. Surface moisture turns to ice crystals and can dull the flavour.

03

Decide: whole, grated or blended

Freeze the whole hand as-is for the simplest option. Or blend the whole root — skin, fibre and all — with fresh lemon juice for ready-to-use portions with maximum nutritional value.

04

Portion before freezing

Freeze blended ginger in small, single-serving portions — an ice tray or rounded moulds work well. That way you use exactly what you need, and the rest stays frozen.

05

Seal and label

Transfer frozen portions to an airtight, freezer-safe container or bag. Squeeze out excess air, seal, and label with the date.

06

Use straight from frozen

No need to defrost. Drop a portion straight into hot water, a smoothie, or your cooking — it melts in seconds and tastes as fresh as the day you made it.

Common questions

Can you freeze fresh ginger?
Absolutely. Fresh ginger freezes exceptionally well. Frozen whole, grated or blended, it keeps its fiery flavour and nutritional value for up to six months in a well-sealed container.
Should you freeze ginger whole or prepared?
Both work. Freezing a whole hand of ginger is the lowest-effort option — just grate it from frozen. Preparing it first (blending with lemon and freezing in portions) means zero prep on busy mornings.
How long does frozen ginger last?
Properly sealed frozen ginger keeps its quality for around 5–6 months. Beyond that it's still safe, but flavour starts to fade.
Does freezing ginger reduce its benefits?
No — freezing is one of the gentlest ways to preserve ginger. The key compounds, including gingerol, hold up well at freezer temperatures, especially compared to ginger left to dry out in the fridge.

The easier way

Or skip the prep entirely.

This exact method — whole organic ginger root blended with organic lemon, frozen into pre-portioned drops — is what DEO does for you. No washing, chopping, blending or washing up. Just drop, melt, drink.
